On a drive to significantly reduce my environmental impact I recently gave up eating meat and fish. But consequently I found myself eating a very carb and dairy-heavy diet - not exactly healthy nor good for the planet. So I decided to start getting a weekly bag of seasonal and locally grown veg, and set myself the challenge to cook at least one new plant based recipe every week with the wide array of veg suddenly available to me.
